Another fun evening around the table. The tomato, mozzarella basil wraps were gone in a flash! Followed with some deviled eggs, avocado to spread on wasa toast. Wasa toast with cream cheese and Everything Bael. went well with the salad and multiple toppings. For dessert we had fresh berry and yogurt parfaits. To top it all off, the company and conversation was stimulating.

This time of year, I start making soup again. One of my favorites is Teri’s Southwest Chicken Soup recipe. I love Mexican food, so it’s a great way to enjoy those flavors with lots of vegetables. I also love that it makes enough to eat some now and freeze some for later.

And, I was thinking how tasty and easy the southwest chicken soup recipe was to make last year. With the change of seasons comes the time for me to pause salad ideas and shift to tasty soups. I am most exciting to try flavorful seasoning for roasted veggies. Any suggestions are welcome. I added everything bagel seasoning to my grocery list.
