I’m a huge fan of soups too! Here is the ‘soup’ tag as I input CARE recipes. There are only two posted now but I will prioritize getting another published this week. (If there was one from CARE that you remember and liked, let me know and I can do that one first).
For a quick savory meal, I like this potsticker soup. I cook the potstickers separately and just put a few in a bowl and put the broth over. I load up the broth with lots of veggies (mushrooms, peppers, zucchini, green beans, etc). Could also serve this broth like a quick ramen with a favorite noodle (instead of potstickers), boiled egg, radish, green onions and greens:
